Da Juan and De Corey


The Recipe for our Spaghetti”
Ingredients:
  • 2lbs of ground beef
  • Amish Pride sausage
  • 1 Bell pepper
  • salt
  • Garlic salt
  • Black ground pepper
  • 2 bottles of Ragu’ (2lb13oz)
  • 1 bag of large elbow pasta (American Beauty brand) (16oz)
  • 1 bag of cheese
  • 1 bag of Garlic bread
Preparation:
  1. Preheat oven at 425 degrees.
  2. Place a large pot of water to boil for your spaghetti.
  3. When water boiled add your salt and cook spaghetti to andante or to your liking.
  4. Next ground your 2 lbs. of ground beef (well done). Add your onions (red onions) and Bell pepper. Add your Garlic salt (Season to your liking) Ground black pepper. Mix altogether in a large skillet.
  5. Next add 1 of your Ragu’s to your pasta and stir.
  6. Next add both of your meats (Ground beef, Amish Pride sausage) into the pot mix altogether. Add your cheese.
  7. Place your garlic bread into the oven until browned. Serve on your finest China say grace and bless the person that made your food. Dig in... Yummy! Yummy! for your Tummy! From our loving home to yours from Da’Juan and De’Corey, mom and dad Cooper.

Gazpacho
I interviewed my mom. She knew this recipe from living in Spain 1 year. She knows it because it is popular in the summer. They served it in pint glasses to drink. Southern Spain is famous for its fresh tomatoes. It is served cool on hot summer days. My mom likes Gazpacho because it is fresh and refreshing.
Ingredients:
  • 6 medium vine-ripe tomatoes, halved
  • 1 ½ to 1 cup packed fresh basil
  • 1/3 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon of Nama Shoyu soy sauce
  • 1 clove garlic
  • 1 to 2 teaspoons spike Celtic sea salt and freshly ground black pepper to taste
  • 1 yellow bell pepper, finely chopped
  • 1 to 2 cobs corn, kernels cut off the cob
  • ½ apple, chopped
  • ¼ jicama, chopped
To make the base: In a blender, combine all of the ingredients and blend until desired consistency is reached. You may use the whole tomatoes, including skin and seeds.
To make “meat”: Combine the chopped vegetables and fruit in a large bowl. Pour the base mixture into the bowl and mix well. Serve well-chilled. It tastes even better the next day!
To make the more authentic “Spanish” version add crusty or dried bread that has been soaked in H2O.

Shepherd’s Pie”
Ingredients:
  • 1 tbsp olive oil
  • 8 potatoes
  • 1lb of ground beef
  • 1 large (skipped)
  • 5 carrots
  • 1 leek
  • 2 Tbsp. butter
  • 1 Tbsp. Worcestershire sauce
  • 2 Tbsp. cream cheese
  • ¼ cup white cheddar
  • 1 bouillon cube
  • salt & pepper
  • 1 can Guinness Chalfcon
Instructions:
  1. Pre-heat oven 350 degrees, peel potatoes cut into quarters, boil potatoes with pinch of salt.
  2. Peel and dice onion, peel and dice carrots, slice leek.
  3. Heat oil in skillet, add onions and leeks and cook until translucent.
  4. Add ground beef, add carrots, beer, Worcester shire. (Skipped) and peas ten (skipped). Bring to boil, reduce heat, simmer for five minutes (skipped) pour contents from skillet (skipped) into (skipped) dish.
  5. Strain potatoes on mash with (skipped) cream on butter (skipped) add milk cream from other consistency using a fork evenly spread potatoes over meat as vegetables.
  6. Sprinkle shredded cheese top. Place in oven and bake 250 degrees for 30 minutes.
Serve, eat, and enjoy!

My mom likes Shepherd pie because it’s good comfort food. My mom is from England and Shepherd’s Pie originated in Ireland and became a traditional dish all across the British Isles. My mom has her own recipe and sometimes she makes it a different way. My Nana made my mom Shepherd’s Pie when she was a little girl. Now my mom makes it for me.

Part 1: Recipe
Brown Lentil Dal”
Yield: 8 to 12 servings
Time: About 1 hour
Ingredients:
  • 1lb. dried green brown lentils, rinsed and pickled over
  • 1lb fresh Roma tomatoes, chopped
  • 1 or 2 medium fresh jalapeƱos, seeded and minced
  • 2 inches fresh ginger, peeled and minced or grated
  • garlic cloves, minced
  • 2 teaspoons ground coriander
  • 2 teaspoons ground turmeric
  • ¼ cup grape seed or peanut oil
  • ¼ cup (1/2 stick) butter
  • 1 tablespoon cumin seeds
  • 4 whole cloves
  • 2 medium yellow onions, chopped
  • ½ teaspoon ground cayenne pepper
  • 1 bunch cilantro, roughly chopped, thick stems discarded
  • Salt and black pepper
  • Juice of 1 lemon
Procedure:
  1. Put the lentils, half the tomatoes, and jalapeƱos, ginger, garlic, coriander, and turmeric in a large pot; add enough water to cover by ½ inches. Cover, bring to a boil over high heat, then reduce the heat to medium and simmer until the lentils are almost tender about 30 minutes.
  2. Continue cooking the lentils while you put the oil and butter in a medium saucepan over medium heat. When the butter melts, add the cumin seeds, cinnamon stick and cloves and cook, shaking the pan occasionally, for 2 to 3 minutes. Add the onions and cook, stirring occasionally, until soft, about 10 minutes. Add the cayenne and 1 cup water; bring to a boil over medium-high heat and simmer for 1 minute, then turn off the heat.
  3. When the lentils are fully tender, serve over hot basmati rice.

1. Where did you get this recipe?
I searched for this recipe online and my friend Lavanya (pronounced LA-VUHN-YAH) from Madras in southern India made a similar recipe for me.
2. What is your connection to this culture?
I worked at an Indian restaurant and made many close friends there.
3. Do you add any special spices to this recipe?
Yes I add spices that are native to that part of the world. Just look at the ingredient list.
Part 3: Biography
My mom cooked all kinds of different dishes since I was little and this was always a favorite. My mom made lentil soup all the time when I was little, Lentil soup may look gross but it is delicious. My mom’s relation to this culture is she worked at an Indian restaurant. I love my moms cooking.

Recipe for Baklava”
Ingredients:
  • 30 sheets of pivyllo (8x8 inches)
  • 1 cup butter, melted
  • 1 cup finely chopped or ground walnuts
  • ½ cup finely chopped or ground blanched almonds
  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • lemon – honey syrup
How to make Baklava
  1. Butter the bottom of an 8-inch square baking pan. Lay 10 sheets of phyllo in pan, brushing each sheet with melted butter.
  2. Mix nuts with sugar and spices and sprinkle half of this over phyllo. Drizzle with melted butter. Repeat with another of nut mixture and phyllo.
  3. Cut without cutting through bottom layer, into diamond shaped pieces. Bake in preheated moderate oven (350 degrees) for 1 hour.
  4. Finish cutting and allow Baklava to cool. Pour warm lemon honey syrup. Makes about 20 diamonds.
Lemon-Honey syrup:
  1. Boil 1 cup sugar, 1 cup water and ½ lemon for 15 minutes.
  2. Remove lemon and add 2 tablespoons honey.

Biography of my Grandmother
My grandmothers name is Carolyn but I call her Noni. She lives at Newport, California. She had Baklava during a recent cruise on the Mediterranean and the Greek islands. She is 74 years old and loves to cook.

Mulgikapsad-Southern Estonian Style Sauerkraut”
Ingredients:
  • 2 pounds Sauerkraut
  • ¾ cup barley
  • 2 pounds marbled roast pork
  • 1 teaspoon salt
  • 1 apple, cubed
  • enough water to cover the ingredients
Procedure:
  1. Place the sauerkraut in a large kettle. Add the barley, pork, cubed apple and salt. Add enough water to cover the ingredients. Simmer for 3 hours or until tender. Be sure to check the water level at intervals to prevent burn in the kettle.

    My Nana Virve, was born in Estonia on July 18th, 1938. She lived in Estonia. Then in world war II, she moved to Germany. When she was 10, she moved to America and went to Lacey Elementary School. She started making Mulgikapsad in her twenties. I like her because she is my grandmother.

Slow Cooker Corned Beef and Cabbage”
Ingredients:
  • 2 stalks celery, halved
  • 4 carrots
  • 1 medium onion, cut in 4 wedges
  • 4 to 6 red potatoes quartered
  • 1 4lbs. corned beef from Gardner’s meat market
  • 12 ounce bottle stout or dark ale
  • 1 tablespoon corned beef spices or pickling spices or spices that come
Directions:
For serving: grainy mustard and horseradish sauce, recipe below
  1. Place celery, carrots, onion and potatoes in the bottom of large slow-cooker or crock pot. Rinse the corned beef brisket and place over vegetables. Add the bottle of stout, spices and enough water to just cover the meat. Cover and cook on LOW for eight to nine hours.
  2. Remove the meat and vegetables from the pot and cover with foil to keep warm. Increase heat to high and cook cabbage until softened but still crispy, 20 to 30 minutes.
  3. Slice brisket across the grain, serve with vegetables, mustard and horseradish sauce. Pass extra cooking liquid at the table.
Creamy Horseradish Sauce:
  • ½ cup heavy cream
  • ¼ cup sour cream
  • ¼ cup drained prepared horseradish
  • dash hot sauce
  • salt and pepper to taste
Whip cream to soft peaks and then fold in sour cream and horseradish, to taste. Season with salt, pepper, and a dash of hot sauce.
The person I interviewed my Grandpa Mike. He had 1 sister and 1 brother. His parents were Virgil at Magairet. His 2nd grade teacher was Sister Mary Donald. He went to Wilson High school. He was 2 years old when he first had corned beef and cabbage. He had many, many friends. The first time he had corned beef and cabbage was 1944. He likes corned beef and cabbage because it is a part of an Irish family tradition.

Mexican Salsa

Ingredients:
  • 10 pcs. Chilepuya
  • 4 pcs. tomatillos
  • 1 clove garlic
  • salt – to taste
  • ½ cup water
  • hot skillet
  • large blender
Procedure:
  1. Turn the skillet to med (3-1), toast chiles whole to nice toast.
  2. Remove stems once toasted same for tomatillos done when juice squirts out, take the leaves off before putting into the skillet.
  3. Next put ingredients in the blender.
  4. Then eat it.

Im interviewing my nanny Gaby. She was born in Mexico, Its a Mexican salsa form a village in guangurto. The salsa is her mom’s favorite and good with ribs it was passed down from her great great great grandmother. It’s good with cheese and tortilla chips.
She was born in Mexico. She moved here when she was one year old. This salsa is a salsa she wants to pass down.

Jerk Chicken Recipe”
Ingredients:
  • 6 sliced scotch bonnet peppers (jalapenos may be used if scotch bonnet peppers are unavailable)
  • 2 Tbsp. thyme
  • 2Tbsp. ground allspice
  • 8 cloves of garlic, finely chopped
  • 3 medium onions, finely chopped
  • 2Tbsp. sugar
  • 2Tbsp. salt
  • 1 to 2 Tsp of the following (to taste)
    • ground cinnamon
    • nutmeg
    • ginger
  • ½ cup olive oil
  • ½ cup soy sauce
  • 1 cup orange juice
  • 1 cup white vinegar
Preparation:
  1. Chop the onions, garlic and peppers. These do not need to be chopped too fine as we will be in blender.
  2. Blend all the ingredients (excluding the chicken) in a blender to make the jerk sauce.
  3. Cut the chicken up into 4 pieces.
  4. Rub the sauce in to the meat, saving some for basting and dipping later. Leave the chicken in the fridge to marinade overnight.
Cooking
  • Bake in the oven for 30 minutes, turn the meat than bake for a further 30 minutes.

Thank you from Ms. Luria

Dear Class and Readers of the blog,

Thank you for all of your healing wishes and cards. I just had a friend from school (a teacher) stop by my house to give me your Get Well Soon sign, mug and cards. What loving cards you made me!

As an update, I can get out of bed for about 5 minutes every hour. I am healing up nicely! It still looks like the Dr. will allow me to come back to work on April 15th as planned.

I am working on creating the recipe book for the auction. Our good friend from the Rex has finished typing up all of the recipes. I will be posting them as I am able in the next few weeks. (So you know, Rex is the person who types up all of the student work. I pay him to type up the pieces.)

Students, speaking of Rex, remember how I told you that not every child is as lucky as you? In many places in the world people have to pay to send their child to school. I wanted to let you know that we all know someone who has to pay - Rex's son.

Rex's son is in second grade, just like many of you. As a family, they have to pay $600 every year to send him to school. Decent schools in that country are not free! The $600 pays for his school uniform, his books and teachers. I just wanted you to know how lucky you are to have a free, public education in the United States.

Only about 2 out of every 3 children attend elementary school in Rex's country and complete elementary school! Here is some information from wikipedia about education in the Philippians, where Rex lives:
The DepEd expects over 13.1 million elementary students to be enrolled in public elementary schools for school year 2009–2010.[32]
Though elementary schooling is compulsory, latest official figures show 27.82% of Filipino elementary-aged children either never attend or never complete elementary schooling,[33] usually due to the absence of any school in their area, education being offered in a language that is foreign to them, or financial distress.

When I get back, maybe we can talk about helping Rex's family. He has helped us so much. He has not asked for any help, but I think that it is something we could do as a class that would really make a difference in a child's life!

“Activities I do outside of school”
            Two of my favorite activities outside of school is piano and ice skating. I have piano lessons on Tuesday. I have ice skating class on Saturday.
            On Tuesday I have piano lessons. I practice the piano every day, because I have a piano at my house. I like playing Lunar Eclipse, Burgmuller and Siciliano. I play the Siciliano with my mom. It is a four hand piece.
            On Saturday I have ice skating class. I like ice skating, though sometimes it’s hard. I am in basic 6. In basic 6, we do bunny hops, lunge, spiral, three turn and T stops.

            My favorite movies are Toy Story 3 and Arthur  Christmas. Toy Story 3 is fun to see with your family. Arthur's Christmas is about Christmas and it is fun to see.
            Toy Story 3 is fun to see with your family. I like it when Andy gives the toys to the little girl because it was nice of him but the girl did not say thank you. And I like it when Andy’s mom takes the toys to the school of the little kid but kids do not play with them.
            Arthur Christmas is about Christmas and it is fun to see it with your family. But it is about Arthur Christmas but they forgot to give a toy because the elves forgot to put it in the bag. At the last they got the toy and they give it back to the little girl because Arthur gave it back to the little girl.

            Today I was very busy, and I had a lot of fun. First I went to my grandma’s house. I started on a project, and I looked at a poster. Then I went to the playdate pdx with my friend Nick. Finally I had a sleep over at my friend Jonah’s house.
            I went to Playdate Pdx with my friend Nick. First we went to the ball room, but people kept changing sides, so we left. Then we went to a place where the floor was painted like stones and lava, and we swung across the lava on ropes.
            Finally I had a sleep over at my friend Jonah’s house. First we played Skylanders and then we went to sleep. When we woke up, we played Legos, and then we played Skylanders again. I had a good time.

            Two great people in my life are my mom, and Ms. Luria. My mom is 45 years old. Ms. Luria is a 2nd and 3rd grade  teacher. They’re both nice and awesome people.
            My mom is a great person in my life. Since my mom is 45, she also has 4 kids including me. She has 2 kids that are 10 years older than my brother and I. My mom is the best mom I could never had!
            Ms. Luria is a great person in my life. She is nice, because she cares and respects her classroom. She’s a good teacher with 24 kids in her room. Ms. Luria is the best teacher I could ever have.

IB Recipe due this Thursday

Just a reminder that students' IB recipe project is due this Thursday, March 21st.   The project rubric and instructions is also attached.  

Student's will be given some class time on Wed Mar 20th (late start day) to complete or add "finishing touches" on the project if need be.  Photos must be sent electronically.  Please indicate only if you do NOT want the photo used for publication in the recipe book.  You have given us permission to use the photo photo unless you tell us otherwise.  

For all other project parts (recipe and written interview paragraph) electronic copies are not necessary but will be greatly appreciated.  Please email projects to Ms. Luria and the subject line should be your child's name.

I think that a Baker needs to get up early. Bakers bake cakes, pies and bread. Sometimes bakers stay with a local baker and learn stuff. A baker needs to know what people like. I think that it would be fun to be a baker because you get to bake. If I was a baker I would want to have a nice bakery.

I eat cereal in the morning. First, you pore in the milk then the cereal. I eat different cereals in the morning.
I like bread fresh from a bakery because it is warm and buttery. Some bakers work in restaurants. Some work in small neighborhoods. Others work in large stores. Some bakers go to special schools to learn to bake. I think being a baker would be cool, but I don’t want to be one when I grow up.

Two animals I like are cats and horses. Cats are soft and cuddly pets. Horses are very fun to ride.
Soft and cuddly pets are cats. Cats purr when you are petting them because they like it. Cats are good pets if you want somebody to snuggle with. Some animals that are fun to ride are horses. You have to put the right tack (saddle, reins, etc.) on if you want to ride. Horses are good pets, but you have to live in country.
I like horses better than cats. I already have a cat as a pet.

One of my favorite breakfast is oatmeal. You don’t need many ingredients. If you cook it for too long, it will be burning hot. The ingredients are: a quarter bowl of oatmeal, a little bit of water, and a little bit of brown sugar. You don’t put too much brown sugar in because it will hurt your teeth.

During to read we do anthology reading and study spelling. At the beginning of walk to read, we do anthology reading. We have spelling test on Wednesday and Fridays.
We do anthology reading at the beginning of walk to read. After we get out are anthology books, the teacher tells us what page to turn to. Mostly when we finish reading our story we have a write to read or another project the book has in it. Since I like anthology reading, I don’t want to stop. Sometimes it is hard to do anthology reading because we don’t have enough books.
On Wednesday and Fridays we have spelling test. Sometimes I forgot to study but I almost always get low percent wrong. When I miss a word I probably haven’t studied. If you get low percent on Wednesday you don’t have to take is on Fridays. Spelling test are fun because you don’t know if you got it right.
My favorite part of walk to read is when you actually get to read because reading is my favorite thing to do. Walk to read is fun because Miss Luria is a great teacher.

Vietnam foods” Everett
Two Vietnam foods are Lemongrass and bamboo shoots. Lemongrass is a type of stalk. Bamboo shoots are yellowish stripes. They look like Parmesan cheese slices.
A type of vegetable is lemongrass. It looks like bamboo, but don’t think it is. Also if you die a stalk in soup, after a while it sill give the soup a lemon flavor.
So in conclusion, lemon grass and bamboo shoots are good food. I have not tasted them, but they are sure to be good.
